When Toronto hospitality icon Charles Khabouth set out to create ANIML, he imagined more than just a steakhouse—it had to be a statement. A bold, unapologetic embodiment of sophistication, exclusivity, and precision. Every detail mattered, right down to the knives. Khabouth, co-owner Sacha Elwakeel, and Executive Chef Mark Cheng turned to Sharpology to craft knives that would not only cut, but elevate the dining experience.

The collaboration kicked off at KOST, Khabouth’s renowned rooftop restaurant. The Sharpology team arrived with a locked briefcase filled with meticulously chosen knife samples, sparking curiosity and excitement. As the knives were laid out, discussions focused on precision, aesthetics, and how the blades would enhance the ritual of fine dining.

The final design was forged from 67 layers of Damascus steel with a VG10 Japanese steel core, combining visual appeal with unmatched sharpness and durability. The sleek, modern blades glided effortlessly through steak, preserving flavor and texture. Handles featured wood grain fiberglass and mosaic brass pins, blending elegance with robustness. Each knife bore the ANIML logo, a mark of exclusivity and craftsmanship.

Sharpology also created a VIP series of custom-engraved knives for Toronto’s top artists and executives, plus branding irons to imprint the ANIML logo directly onto signature steaks. These touches reinforced the brand’s commitment to excellence, merging taste, presentation, and artistry.
